Beetroot salad with basil pesto & sesame seeds


Beetroot can be eaten grilled, boiled, steamed, cooked, roasted or raw and shredded  as a salad. You can also make juice or soup from it. I've bought beetroot that already peeled and cooked at grocery store. I was a little bit lazy to prepare raw beetroot because at the end many red spots or stain everywhere. :-)
On this recipe I used basil pesto, you can make pesto by yourself or buy it at store. I'll show you later how to make basil pesto.





BEETROOT BASIL SESAME SALAD

INGREDIENTS:

3 cooked Beetroot
1 Tablespoon Sesame seeds
1 Tablespoon Basil pesto
1 Tablespoon Olive oil
1teaspoon Vinegar
1/2 teaspoon Balsamico
1/2 teaspoon Sugar
1/2 Lemon, press the juice
Black pepper
Salt


INSTRUCTIONS:

- First make the dressing, prepare a bowl, mix basil pesto with olive oil, vinegar, balsamico, sugar, lemon juice, black pepper and salt, add sesame seeds, stir with spoon. 
- Cut dice the beetroot, add into dressing bowl, stir it until all beetroot coated with the dressing.
- You could directly serve it or keep it in refrigerator first for 10-15 minutes and ready to serve.
