Sambal goreng ati

Sambal goreng ati is traditional Indonesian food , it's made from chicken liver or beef liver, cook together with dice potatoes and seasoning with spices, especially chilli. It is not only eaten at special event like Idul Fitri but also as daily menu, in Germany it's not top people's shopping list, it's overlooked as an undesirable part. Most of them don't like it.
Chicken livers are high in protein and vitamins, 
it's good choice for anyone who suffer anemia, 
but pregnant women suggested not to eat liver.

Tips how to serve it:
- saute of chicken liver with chopped onion, mushroom
- puree beef liver with dip
- grill chicken liver skewer
- chop cooked chicken liver, add to pasta sauce

In Indonesia, normally it is also cook with Petai  known as stink bean, 
I didn't use it because I don't like it.
I got the recipe from my mother,
 since I'm not specialist of indonesian food, I'm trying my best to cook it, that's why I always ask her.


250g beef liver or chicken liver
400g Potatoes
3 red chilies
8 small shallots
2 cloves garlic
3 candlenuts / kemiri
3cm galangal
1stick lemongrass
100ml coconut milk
Salt and Pepper
oil for frying

- peel off and wash  the shallots, garlic and galangal

-  boil the chicken or beef liver about 10-15minutes

- cut dice the liver, set aside

- cut dice the potatoes, wash and drain

- heat oil and fry the potatoes for about 20 minutes

- strain the potatoes, let the oil drops

- mix shallots, garlic, candlenuts, chilis, salt and pepper shredder machine

- fry the fine spices in hot oil for one minute

- add galangal and lemongrass

- add the cook-diced liver

- add the dice-fried potatoes

- stir it, add coconut milk

- ready to serve

-  serve with warm rice
